Cinnamon Sticks

Cinnamon is one of those spices that traveled before any of us did. It was in ships and on camels and in the pockets of people who never made it home — and by the time it gets to your kitchen, it's already lived more lives than you have.

Ours comes from Guangxi in southern China, where cinnamon trees grow on misty hillsides and the bark is stripped by hand, then left to curl as it dries. We sell them whole — sticks, not powder — because cinnamon loses itself the moment it's ground. Drop one into a pot of chai simmering on the stove. Stir hot chocolate with it. Throw two into apples on a low heat and walk away for an hour. The smell will find you.

60 grams is enough for a season of small comforts. Cinnamon is meant to be used, not measured.
